 I know, you think what?! MINI  KETO CHEESECAKES!! sounds like BS, but it’s actually true. We know how hard it is to maintain your daily lifestyle with the new diet trends like Keto, gluten free, etc, etc. The diet even celebrities like Halle Berry, and Kim Kardashian are sworn by. I’m talking about Keto diet in which you eliminate your carb intake by cutting off sugar and starchy food. But Waite, your life doesn’t have to suffer.

Especially when you are going to celebrate Valentine day and not sure what you are going to prepare for the dessert. I’m not talking about that dessert, which you’ve planned for later. But I will walk you through how to make a real deal, Mini Cheesecakes.

For 6 mini cheesecakes servings

. I/2 Cup Almond puree (Almond meal)
. 2 tbsp Melted Butter Better
. 8 Oz or 225 gr of cream cheese
. 1/2 tbsp vanilla extract
. 1/2 tbsp lemon juice
. 1 large egg
. 1/4 cup erythritol *



Erythritol is sugar alcohol (there’s no alcohol in this substance) which has %70 of sweetness as its alternative sugar. It has a %0 glycemic index. Which means its absolutely safe to consume by diabetics and on a keto diet.  You might be concerned that erythritol been processing through the corn. So I’ll recommend you getting a Non-GMO labeled pack.

. Instruction

Pre-heat the oven on 350 F or 177 C, Mix 1/2 cup almond puree and butter with a spatula till the mix gets crumbly.
Put the cupcake liners in on the muffin tin, for easy removal. Fill the tins with about each an inch of dough each. Then bake them for 5 minutes. Then take your room temperature cream cheese and beat it up with a mixer until it is creamy. Add vanilla extract, lemon juice, the egg, and erythritol then beat them again until the mixture is done.
Take an ice cream scooper to fill the rest of muffins containers to the brim. Then put the tin back in the oven in the same 350 degrees and bake them for 15 minutes. you can use macadamia to garnish your dessert, before serving. 

Magic trick

Store your cheesecakes in the fridge at least for overnight. I’ll give them two days if you wanted a chef-like quality cheesecakes. Of course, the chances are slim!
